Restaurant Andre (Singapore): Poetry in food and wine and then some
Quite simply put, Restaurant Andre, often categorized as a nouvelle French/Mediterranean cuisine, provides an unique dining experience unlike any other eateries I've been to. Not including the numerous exquisite amuse bouches and desserts (the most memorable one being "Snickers reconstructed" which is both fun and tasty), their signature 8 courses dinner (Pure, Salt, Artisan, South, Texture, Unique, Memory, Terroir with elaborated description on the menu) conveys a full array of enthisiasm, elegance, imagination, and artistic flair that one relates more to a great poem than food.
Now the wines. I am ashamed to claim I have heard or tasted very little of them before (check the images below and see how many of them you recognize.) The marriage between the food and wine pairings were heavenly and expertly done; they are all small-scaled, biodynamic, and relatively little known boutique wineries of outstanding quality that only the most discerning and daring sommeliers can put together with flying colors.
It was described by Chef Andre that our capacity to taste food is influenced by our memory banks and personal experience. We have also heard from other restaurant operators and/or Chefs regarding their passion and theories and that their creations have turned out to be bland and uninspiring. Admit it, foodies don't really care that much about the most exotic and natural ingredients, the boldest stroke of creativity, or the most artistic presentation of dishes if they do not somehow produce magical synergy in triggering some sort of orgasms to your palate. But Andre and their whole team have really got it made and are well deserved of their rising international acclaim, and then some.
